How far in advance can I marinate the turkey?

You should not marinate the turkey thighs for more than 36 hours. You can start marinating them the morning before serving, but the latest you should begin is the morning of serving, allowing at least 8 hours to marinate.

How long do turkey thighs take to cook?

These turkey thighs will cook in approximately 50 minutes at 400°F (200°C). It’s best to take them out of the refrigerator 1 hour before roasting and let them rest for about 10 minutes after cooking. Always use a meat thermometer to ensure they reach an internal temperature of 165°F (74°C).

Should I cover turkey thighs when roasting?

No need to cover them! Roasting uncovered will give you that desired crispy skin. If they begin to brown too quickly, you can lightly tent them with foil.

Roasted Turkey Thighs: Recipe Instructions

In a 9×13-inch (23x33cm) casserole dish, spread the onions in a single layer. Pat the turkey thighs dry with a paper towel and place them on top of the onions.

Combine the melted butter, olive oil, finely minced or grated garlic, salt, and pepper.

To mince the garlic, thinly slice it, cut the slices into matchsticks, and then mince.

Rub this marinade all over the turkey thighs, cover, and marinate for at least 8 hours, preferably overnight.

Remove the turkey thighs from the fridge 1 hour before roasting. Preheat your oven to 400°F (200°C). Roast for 50 minutes, rotating the pan 180° halfway through, or until a thermometer inserted into the thickest part of the thigh reads 165°F. If the turkey begins to brown too quickly, lightly tent it with foil. Allow to rest for 10 minutes before serving.

A Simple Turkey Gravy from the Drippings

Don’t let those flavorful drippings go to waste! Pour the juices over the turkey as is, or create a quick gravy with them.

  1. Strain the liquid from the roasting pan into a gravy separator.
  2. In a saucepan over medium heat, create a roux by whisking together 2 tablespoons of turkey fat (or butter) and 2 tablespoons of flour. Cook for 1-2 minutes, whisking constantly.
  3. Gradually whisk in 1 cup of strained turkey drippings (if you don’t have enough drippings, you can add turkey or chicken stock).
  4. Simmer until thickened, seasoning to taste with salt and pepper. If your gravy becomes too thick, add a splash of stock or water. A small dash of dark soy sauce can also be added for color and flavor!

Roast for 50 minutes, rotating the pan 180° halfway through, or until a thermometer in the thickest part of the thigh registers 165°F. Lightly tent the turkey with foil if it’s browning too fast. Rest for 10 minutes before serving.
