After testing several brands and types of long white rice, we found that Mahatma extra long grain rice is a great choice. It delivers a similar texture, is budget-friendly, and is widely available in grocery stores. Jasmine rice can also be used, although it tends to have a more pronounced aroma than plain extra-long white rice.

Rice to Water Ratio

The rice-to-water ratio for this cilantro lime rice is designed for cooking in a 2-quart sauté pot with a lid. If you opt for a rice cooker, the ratio may vary based on your specific model’s recommendations.

For stovetop cooking, use the following rice-to-water ratio:

  • 1 dry measuring cup (195 grams) of extra long grain white rice
  • 12 ounces (354 grams) of water

One dry measuring cup of extra long-grain white rice typically serves 1-2 people. If you wish to prepare more, simply double the recipe to yield 2-4 servings while maintaining the same ratio. Note that we have only tested this serving size and cannot confirm the ratio for larger quantities.

Using a rice cooker offers a hands-free and convenient option, although it may take longer than stovetop cooking. For instance, our Zojirushi Micom rice cooker takes 60 minutes to cook 2 cups of long-grain white rice, while the stovetop method takes about 30 minutes.

When using a rice cooker, refer to the specific long-grain white rice-to-water ratio provided in your rice cooker manual instead of the ratio outlined in this recipe.

The steps for using a rice cooker are simpler than those for stovetop cooking:

  1. Add the oil to the rice cooker pot, then mix in the rinsed rice and salt.
  2. Pour the water into the rice cooker pot and stir again, ensuring the rice is leveled.
  3. Place the bay leaves on top.
  4. Close the rice cooker lid, select the long-grain white rice setting, and start.
  5. Once finished, lift the lid and fluff the rice with a spatula.
  6. Incorporate the citrus juices and cilantro, gently mixing the rice.

  • Add the 2 cups extra long grain rice and 1 teaspoon kosher salt to the pot, stirring until fully coated with oil.
