How to Make Garlic Pasta
Cook Pasta
- Begin by boiling 5 cups of water with 1.5 teaspoons of salt in a medium to large pot.
- Carefully place 250 grams of spaghetti into the boiling water without breaking them. As they cook and soften, you can gently immerse the top part with tongs.
- Note: We won’t be adding any additional salt later. If you’re on a low-salt diet, consider adding ½ to 1 teaspoon of salt while cooking the pasta and adjust to taste later.
- Cook the spaghetti until al dente, or just tender with a slight bite in the center.
- Drain the cooked pasta using a strainer, but reserve ½ cup of the pasta water. Set the spaghetti aside.
Make Garlic Butter Sauce
- In a sauté pan or skillet, combine 1 tablespoon of extra virgin olive oil and 3 tablespoons of butter.
- Heat on low until the butter melts.
- Once melted, add 2 tablespoons of minced garlic.
- Stir to combine the garlic with the butter and olive oil mixture.
- Cook the garlic on low heat until it turns golden, stirring occasionally.
- Keep a close eye, as garlic can quickly go from light to dark brown.
- When the garlic reaches a light golden color, continue stirring until it becomes golden brown, then turn off the heat.
- Remove the pan from the heat and add 1 teaspoon of smoked paprika and ½ teaspoon of ground black pepper.
- Mix to combine; the spices will cook with the residual heat from the fats.
- Ensure the spices are evenly distributed in the garlic butter mixture.
- Add the reserved pasta water and return the pan to the stovetop to heat.
- Simmer on medium-low for about 1½ to 2 minutes, or until the sauce thickens slightly and emulsifies.
Make Garlic Pasta
- Using tongs, add the cooked spaghetti to the garlic butter sauce in the pan.
- Toss and mix well, cooking for an additional 2 to 3 minutes until the liquids have mostly evaporated.
- Add 2 teaspoons of lemon juice and stir to combine. Adjust the amount of lemon juice to your taste.
- Finally, add 3 tablespoons each of chopped parsley and basil.
- Mix thoroughly and turn off the heat. Taste and adjust seasoning with salt if necessary.
- Serve the Garlic Pasta hot, garnished with vegetarian parmesan cheese or fresh herbs if desired.
